Pink Macarons


Pink macarons look complicated and taste like they're really complicated to make, but they're really not that hard.  They make awesome gifts for people because they look... awesome.  And classy.  And for gawd's sake, they're pink!  We made these a little while back and trust me, everyone loves them.

Pink Macarons

50g white chocolate
1 tablespoon thick cream
1 egg white
1 tablespoon caster sugar (sifted)
pink food coloring
100g icing sugar
60g almond meal

  1. Make white chocolate ganache by melting the white chocolate and then mixing in the thick cream.
  2. Whisk egg white until fluffy, then beat in sugar and food coloring. 
  3. Fold in the icing sugar and almond meal.
  4. Using a piping bag with a 1-2 cm plain opening, pipe the mixture onto a tray. The piped mixture should be round, approximately 4 cm wide. Remember to leave space between them!
  5. Stand for 15 minutes.
  6. Preheat the oven to 150 degrees Celsius.
  7. Bake macarons for 20 minutes.
  8. After the macarons have cooled down, sandwich them with ganache and dust with icing sugar!
